- Chop the chocolate in a bowl and pour over the cream removed from the heat. Stir to dissolve and let stand until hot.
- Pour this preparation over the already cooked shortcrust pastry. Let cool, cover with transparent film and keep in the fridge for two hours.
- Wash and remove the leaves from the strawberries. Dry well, cut in half and place on the cut side over the pie filling.

- 100 grams of raspberries or any other red fruit.
Preparation
- To start, prepare a raspberry compote. Put 1 gram of gelatin sheets to hydrate with cold water for 10 minutes.
- Put the fruit, 45 grams of sugar and the lemon in a saucepan. Bring to the boil. Remove from the heat and add the well-drained gelatin sheets. Remove so that everything is integrated.
- Pour the red fruit compote into 4 individual glasses and leave to cool in the refrigerator for at least an hour.
- Crush the cookies in a food processor or blender and spread over the raspberry layer.
- Hydrate the rest of the gelatin with cold water for 10 minutes. Pour the cheese into a bowl, add the egg yolk and beat with a whisk.
- Whip the cold cream in another bowl and gradually add the rest of the icing sugar. Then add the cream with the mascarpone.
- Drain the gelatin and melt it in the microwave for a few seconds. Add to the cheese and mix well.
- Pour over the biscuit layer and reserve in the refrigerator for at least 4 hours before serving.
3. Tartlets with lemon and blackberries

ingredients
- 2 lemons.
- 5 eggs.
- 90 grams of sugar.
- Tarts to be filled.
- 125 grams of butter.

Preparation
- Squeeze the lemon juice and grate the peel.
- Beat the egg yolk with 30 grams of sugar. Add the lemon zest and juice.

A classic among ice creams and also among red fruit desserts. Preparing it isn’t difficult or requires a lot of effort, it’s just essential to calculate the time needed to cool well.
ingredients
- 50 grams of invert sugar.
- 500 grams of sweetened natural yogurt.
- 275 grams of frozen berries of your choice (blackberries, blueberries or raspberries).
- 100 grams of coconut milk (previously chilled).
It can be prepared with a wide-mouth jug, baby or a blender cup.
Preparation of dessert ice cream with red fruits
- Pour all the ingredients into the chosen container and blend until you get a fine cream. If you want to remove the seeds from red fruits, they must first be crushed separately and passed through a sieve.
- Transfer contents to an airtight container. It better be stainless steel.

Preparation
