  • Put the fruit, 45 grams of sugar and the lemon in a saucepan. Bring to the boil. Remove from the heat and add the well-drained gelatin sheets. Remove so that everything is integrated.
  • Pour the red fruit compote into 4 individual glasses and leave to cool in the refrigerator for at least an hour.
  • Crush the cookies in a food processor or blender and spread over the raspberry layer.
  • Hydrate the rest of the gelatin with cold water for 10 minutes. Pour the cheese into a bowl, add the egg yolk and beat with a whisk.
  • Whip the cold cream in another bowl and gradually add the rest of the icing sugar. Then add the cream with the mascarpone.

  • 100 grams of coconut milk (previously chilled).
