Processing
- Sift the flour together with the baking powder, salt and cocoa. Reservation.
- Grease and flour a pudding mold.
- Beat the butter with the sugar until you get a homogeneous mixture.
- Add the eggs one at a time, mixing after each addition.
- Add the cream cheese and vanilla essence. Mix.
- Add the dry ingredients and continue mixing with a wooden spoon and enveloping movements until a lumpy mixture is obtained. Don’t beat too much to avoid activating the gluten in the dough, or the cranberry cocoa pudding would dry out.
- Add the blueberries and mix thoroughly.
- Pour the pudding into the mold and bake in a preheated oven at 160°C until it comes out clean by inserting it with a toothpick (about an hour).
- Serve garnished with blueberries on top.

Ingredients for the pudding
- 140gr. Made with flour
- 180 g. of sugar
- 2 tablespoons cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 114 grams of unsalted butter
- 1 egg
- 1 teaspoon of vanilla extract
- 125ml of milk
- 2 cups of blueberries
Ingredients for the sauce
- 240 grams of sugar
- 115 grams of dark chocolate
- 2 tablespoons cocoa powder
- 1 tablespoon of corn starch
- 180ml of cream
- 125ml of water
- 2 cups of blueberries
Preparation of blueberry and cocoa pudding
- Sift the flour together with the cocoa, baking powder, bicarbonate and salt. Reservation.
- Place the oven rack in the center of the oven and preheat to 180°C.
- Prepare the pudding mould: butter and flour. Reservation.
- Beat the butter with the sugar until you get a white mixture.
- Add the vanilla essence and egg.
- Add the dry ingredients alternating them with the milk, continuing to whisk at low speed.
- Add two cups of blueberries and mix gently with a wooden spoon.
- Pour the mixture into the mould. You can also put the mixture into muffin molds if you need a dessert in a short time, in this way you will reduce cooking times. Reservation.
Preparation of the sauce
- Take a saucepan and pour sugar, cocoa and cornstarch into it. Mix.
- Stir in the dark chocolate, heavy cream, water and the last two cups of blueberries. Bring to moderate heat, stirring constantly.
- When the mixture boils, lower the heat and cook for one minute, stirring constantly.
final preparation
- Pour the sauce over the pudding.
- Bake for 45 minutes or until an inserted toothpick comes out clean.
