  • 4 boneless chicken breasts (800 g).
  • 4 wide strips of turkey ham (about 300 g).
  • 12 large basil leaves
  • 1 tablespoon of chopped basil (15 g).
  • 1 tablespoon of white wine (15 ml).
  • 2 tablespoons of milk cream (30 ml).
  • ½ cup low-sodium chicken broth (125 mL).

Preparation:

  1. First, preheat the oven to 180°C.
  2. Then, start by melting the butter in a pan with the olive oil.
  3. Next, add half the shallots and garlic and begin sauteing until fragrant and tender. It will take about 2 or 3 minutes.
  4. Then add salt and pepper and remove from heat. Keep the mixture in a bowl and reserve.
  5. Spread the chicken breasts cut into wide strips and start stuffing them with the shallot and garlic mixture. Also add 3 basil leaves and the minced turkey ham.
  6. Then, arrange the chicken breast pieces in a container or tray and roast them turning them every 5 minutes, without burning the skin.
  7. Then lower the oven temperature and start cooking for 20 minutes. After this time, transfer the breasts to a bowl and keep them warm.
  8. Keep the chicken juices in the bowl and scoop out the fat with a ladle. Then, put it back on the baking sheet, over medium heat.
  9. Add the rest of the shallots and garlic to the hot chicken and stir until well blended. It will be enough with 2 minutes, more or less.
  10. Almost to finish, pour the spoons of white wine and let it boil.
  11. When it’s about to dry, add the chicken stock and cream.
  12. Finally, wait for it to dry again and you can add the chopped basil and a pinch of salt and pepper. Now you can serve it in the company of potatoes and vegetables.
