  • Spaghetti (300 grams)
  • 1 large onion
  • 3 cups of peeled pumpkin (600g)
  • 1 cup of liquid cream (250 ml)
  • 2 tablespoons of olive oil (30ml)
  • 2 tablespoons of nutmeg (30 g)
  • 1 tablespoon of salt (15 g)
  • 1 tablespoon of ground black pepper (15 g)
  • 2 cups of Parmesan (optional) (200g)


  1. Pour a drizzle of olive oil into the pan and add the onion cut them into julienne strips or slices and sauté them over medium heat with a little salt.
  2. Then, add the peeled pumpkin and sow in the pan with the onion. Cook until softened and integrated.
  3. From time to time you should stir a little to obtain a more homogeneous and uniform mixture.
  4. In the meantime it’s time to put the spaghetti in a pot with water, oil and salt and cook them.
  5. Finally, add the cream to the pan and stir in a little cheese.
  6. When the spaghetti is ready, add it to the other ingredients and cook for another 2 minutes.

Spaghetti recipe with pumpkin and mushrooms

You will make this variation of the original recipe much easier and easier than the first one. Also, if you have a little more time, you can add some pesto and some chicken fillets. However, preparing it with pumpkin and mushrooms, you will have an unbeatable and very nutritious recipe.

  • 200 g of spaghetti
  • 3 chicken fillets
  • 2 cups of chopped pumpkin (400g)
  • ½ cup mushrooms (100 g)
  • 2 stalks of broccoli
  • 1 large onion
  • 2 cloves of garlic without skin
  • 2 tablespoons of olive oil extra virgin (30 ml)
  • 1 tablespoon of salt (15 g)
  • ¼ glass of white wine (62ml)


  1. Steam both the squash and the broccoli.
  2. Then, in a pan, brown the onion cut into julienne strips along with the garlic cloves.
  3. Add the mushrooms, once the onion is transparent. Saute everything together for 1 minute. Don’t forget the salt.
  4. Parallel, arrange the chicken fillets on a plate and roast them. Then, cut them into small pieces and add them to the pan.
  5. Likewise with the squash and broccoli but cut into small pieces.
  6. Finally, add the touch of white wine to the pan with all the ingredients together and mix for 2 minutes. This will give it a touch of special flavor.
